I understand why fundies would be scared of evolution, but why would a non-fundamentalist xian not accept it?

The real problem is that Science has been advancing way to damn fast.

It used to be that the church, and the rest of society, had a few generations to process one major discovery, before the next one came along.

It took the church over three hundred years to actually apologize and admit Galileo was right. Darwin, on the other hand has been dead less than 150 years.

Much as I would like to blame the church for this backwardness, Scientists themselves are not that much better. Einstein never really accepted some ideas of quantum physics.

Good/real science must be provable, repeatable and obserable so by these standards evolution is not proveable or scientific.

It takes waaaaay more faith to be believe in evolution than a creator God.
