I just purchased 1/4 beef. The butcher is a small town, one man band. I can assure you that no tendons or ligaments from the animal I bought were ground, whipped at 100mph in a centerfuge, and sprayed with ammonia. That crap hit the "inedible" tub where it belongs.

I know the people I bought the meat from. I drive by their cows quite frequently. These animals are open pasture critters that have been well cared for. Plus I paid less per pound than the average person does at the "Big Store" with their ground whatever shipped in from Nebraska.

I go to a local butcher like yours. I always buy ground sirloin or ground round. The price is usually about 50 cents a pound LESS than at the box grocery stores. And the taste is amazing, there is absolutely NO comparison! In fact, I try to buy all my meat from them, the quality is so much better! Smile

If I could afford to go to a butcher, that's where I'd go. Alas, I'm on a budget.

Now, the meat that comes in that plastic tube and stapled at both ends - you know the one I'm talking about. 1 lbs for less than $2. I know this isn't premium ground chuck. I also know it's destined for spaghetti sauce or hamburger helper. I could really care less if it had half a calf heart. Because it fries up real nice, and it tastes like beef. Cuz it is.

I agree with the ammonia part being troubling. As a consumer, I probably should have known that. I probably would have still bought what I buy, because I still buy what I buy.

i got 145 lbs of locally grown meat for 350 bucks. half price from my local groc. store...

We had a place like that right up the road from where I used to live. They had the BEST peppercorn bacon I've ever tasted. The meat was always as good as ever. I'm def a carnivore.
