If I'm grilling and it's a really good cut of meat, I prefer a dry rub. Cheaper meats I marinade. My main marinade for chicken and pork is Mojo Criollo. It comes in a lot of brands the best being Kirby but Goya is pretty good too. I will even partially boil pork and chicken in the marinade and then cook it on the grill for added flavor.

My husband doesn't like the flavor of BBQ sauce. So I found a dry rub recipe that I found for boneless pork ribs. I've adapted it for pork chops; I make a large batch and put it into a large bottle with the shaker top from paprika I got at Sam's. Now I just sprinkle it on and I can rub the spices in with a plastic bag on my hand to avoid touching the meat. (laura99t)
My kids won't eat plain pork chops anymore. LOVE it.I also have an olive oil, lime and basil marinade I use on chicken.
