If you have a slow cooker (crock pot), you can do some great dishes with lentils. We make Indian dal using our slow cooker, and it's both hearty and delicious. It's pretty easy to do; just put a bunch of ingredients in the slow cooker, turn it on, and come back however many hours later when it's done. In addition to all of that, it's also inexpensive.

Similar to that, you can make bean soups very easily that are filling and tasty. You can make big batches of the stuff that freeze and reheat very easily.

A lot can be done with sweet potatoes, and they have high amounts of some useful vitamins. Mashed sweet potatoes are fantastic.

You can do a lot with squash. Butternut squash makes a great soup. Sauteed or roasted squash is awesome.

I'm nowhere close to being vegetarian, but I do love dishes made with vegetables.

We're eating mostly vegetarian now because of the hubby's cholesterol and my continued weight loss ( down 63.8 pounds and counting !!!) although we aren't official vegetarians. You can't go wrong with Indian food and I find good, reasonable recipes at budgetbytes.blogspot.com, which is not strictly vegetarian but she has some good vegetarian recipes.

I recently decided to become vegetarian because pretty much anything I eat makes me sick and miserble. I've been developing a lot of sensitivities in my "old age". I can't eat any dairy except mozzarella, anything with gluten turns me into a balloon, and crazy spices give me indigestion. Sad The only thing that seems not to bother me is veggies and rice.

Giving up pasta has really depressed me. I'll still suck it up and eat it once in a while because I love it so much.
