Why all the Liquor?

The answer is 'why not' liquor. You list only 2 nots. The church and health risks. The first no longer applies to ex-fundies. The second is only risks that can be kept to a minimum by avoiding worst case drinking scenarios. As others have noted, the health risks noted by anti-liquor campaigners are typically hyped up and only apply to worst case scenarios.
